
A word about our roasters
A roaster must be an artist, finding the perfect balance of the delicate sensory components of coffee: flavor, aroma, body and acidity. The true measure of the roasters' success is at the cupping table. From every roast, beans are "cupped" by the roasting staff, every day, to confirm the judgments of individual roasters. The almost imperceptible variations in each roast are evaluated, and the cuppers discuss how to coax the maximum amount of flavor from each of the various coffees. Each coffee has its own perfect degree of roast depending upon how it was grown, processed and stored, and the roaster must account for these variations in every coffee. We believe you'll appreciate the tremendous skill and talent of the roasters as you enjoy these coffees!

Coffee is shipped 1-2 days after your order is placed. We don't ship immediately because we don't keep it sitting on the shelf. When you order, we roast. And then we give it to UPS for delivery to your door.
